Toasted Coconut glazed chocolate cake
An amazing snacking cake with a deep chocolate taste enhanced by the brewed coffee. Topped with the toasted coconut they are an amazing flavour match!
Ingredients
- 1 + 1/2 sticks softened butter
- 1 +1/2 cups sugar
- 2 eggs
- 1 + 1/2 tsp pure vanilla
- 1 +3/4 cup all purpose flour
- 3/4 cup good quality cocoa powder
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 +1/2 cup brewed coffee
- 1/2 cup icing sugar
- 2 tbsp water
Instructions
- Preheat oven to 350 degrees
- Grease a 9'x11' baking pan
- Cream butter and sugar together on medium speed of mixer
- Add eggs 1 at a time and mixing thoroughly
- Add vanilla
- Sift together dry ingredients
- Slowly add dry ingredients to wet ingredients alternating with the brewed coffee on low speed of mixer
- Pour cake batter into prepared pan and bake at 350 degrees for approximately 45 minute or until cake tester or toothpick comes out clean. cake is done when cake starts to pull away from the sides and does not jiggle in the the middle.
- After cake cools, brush the entire cake top with a glaze made up of icing sugar and water (approximately 1/2 cup icing sugar and 2 tbsp's of water)
- While glaze is still wet sprinkle the entire top with the toasted coconut
- Enjoy!

Chocolate coconut glazed chocolate cake
I love Tim Horton’s chocolate toasted coconut donuts. Not all the locations make them so if I’m ever in and see them, they become hard to resist. This toasted coconut glazed chocolate cake is an all time favourite in our home. Something about that toasty nutty flavour with the chocolate screams “I go hand in hand with a warm cup of Java!” Being the coffee nut that I am, it goes without saying that this is one of my favourite treats. I incorporated that donut taste into a light snacking cake which can be an easy desert to whip up or serve for an afternoon tea.
This also freezes extremely well so it is the perfect cake to add to your freezer and pull out when that hankering strikes to just have something chocolatey. Or of course if you want to share with some unexpected company. This is surely something I guarantee will impress!
Now if you are looking for that super sweet, rich, gooey desert…you can keep looking. This is not it. This is a snacking cake to have with your afternoon coffee or as a light desert. Serve it with a dollop of whip cream and it makes a pretty presentation.
