Well, we kind of cheated on the cucumber picking this year. It’s a bit of a chore and this summer has just been running out of free days! So off to the market this past Saturday is where my sister and I went. This time of year has plenty of freshly picked cucumbers from a farmer’s field. We were lucky to find some beauties from one of our favourite farmers there, a mennonite family run farm who always seem to have the freshest veggies and the friendliest service.
We try our best to make these delicious simple dill pickles every summer.
I don’t remember the last time I purchased a store bought jar of pickles! This recipe for dill pickles are crisp, and packed full with dill and garlic flavour (and I emphasize the garlic!). The best part though is that they are so simple to make and take only a few ingredients!
The only down side of making these pickles is if you are one of those people who cannot stand the smell of vinegar. I won’t lie, it can get kind of smelly in your kitchen with that strong vinegar. Best to do it on a day where you can have the windows open!

- 1 1/2 bushel basket pickling cucumbers
- 1 bunch dill approximately 3 plant stems
- 8 cups vinegar
- 8 litres water
- 2 cups salt
- 4 heads fresh garlic
- Add the water, vinegar, and salt to a large pot and heat to dissolve all the salt. Keep the brine on a low simmer while filling the jars.
- Wash all the cucumbers in water only thoroughly
- Peel and roughly chop garlic
- Pick off dill weed and flower heads from stems
- Start filling jars with a couple tsp's of chopped garlic and add bunches of dill pieces
- Arrange the cucumbers tightly into the jars
- Start to fill the jars with the hot brine. (best to use a funnel to prevent spillage and burns). Leave 1/4 inch from the rim.
- Seal the jars tightly making sure none of the seals are rusty.
- Boil jars for 5 min in a pot of clean water and remove with a jar lifter.
- Let cool and store in a cool dry place, making sure lids have sealed before putting away.
- Enjoy!
Garlicky dill pickles with only a few ingredients and simple to make. Simply the best tasting!
