My inspiration for using this Portuguese sauce a few years back.
We had been invited to a friend’s home for dinner which was always a treat to get new ideas. They are both amazing cooks and have inspired many new meal ideas in my kitchen. On the menu was BBQ chicken with the incopil chicken seasoning and after my first bite I was hooked. That’s when it’s time to get creative. Although this seasoning is intended for chicken, this Portuguese sauce makes a Pork Tenderloin taste amazing!
The sauce is basically a puree of peppers, garlic and wine.
How can that possibly taste bad? Those flavours are a match made in heaven! Not to mention that it contains one of my most favoured ingredient….did I ever mention I am a huge fan of garlic? That would be a definite crisis in my kitchen if there were suddenly a world shortage of garlic. Plus it’s good for you!
This is a sauce by Incopil imported from Portugal labelled “seasoning for chicken”.
This sauce has a similar texture of tomato paste, however the paste is made from the garlic and peppers. Easy enough to do at home by cooking down some pureed peppers and garlic and thinning it with some red wine. However, when in a pinch, this is a VERY easy seasoning that tastes amazing!
So to every great thing there is a downside unfortunately; I have yet to see this sauce stocked on any mainstream supermarket shelves. We buy this from a Portuguese fish market here in town. Since it’s not somewhere I go frequently, I tend to stock up when I go so I have it on hand. If you need assistance finding this, let me know and I can help you source it.
Although this is labelled as a chicken seasoning, it makes an amazing marinade for pork tenderloin!
Marinate the pork loin in this overnight and it becomes so tender it nearly melts in your mouth when you eat it! Although it can be cooked several different ways, my preference is grilling it on a “Big Green Egg” style kamado grill. It becomes slightly smoky, still juicy and full of mouth watering flavour!

Portuguese style Pork Tendeloin, slightly smoky, juicy, tender and full of mouth watering flavour!
Ingredients
- 1 jar of Incopil seasoning for chicken or make your own with cooked down bell peppers, red peppers, (5 peppers) garlic (3 cloves) and red wine (1/4 cup). Puree to a smooth texture
- salt and pepper to taste
- 2 lbs of pork tenderloin
- 1/4 cup water
Instructions
- Place pork tenderloin in a freezer bag day before cooking with 2/3 of the sauce and a bit of water (1/4 cup) to spread the seasoning evening over the meat
- Heat the grill and sear the pork
- Turn down the heat and slow cook for approximately 1 hour
- Brush meat with remaining sauce in last 30 min of cooking
- Enjoy
