In London, Ontario today it is HOT! Not that I am complaining in the least. I love the heat. So much so that my husband constantly reminds me that I was born in the wrong country. Sorry Canada, I love you but some improvements could be made on your weather personality. Not today though! It is a balmy 35 degrees, feeling like 39 with the humidex factor. That’s awesome for lounging on a beach or enjoying the pool, but not so awesome for cooking. So if you are anywhere hot like here today, here’s a summer recipe that is so easy to make, won’t heat up your kitchen and delicious to boot!
My sister introduced me to this Taco salad several years ago after she brought it to a potluck. It has been a hit ever since. It’s a change up from taco’s, and packed with flavour that you will find irresistible! So if your kitchen has a little too much heat tonight, give this a try.
Ironically as I was writing this blog post about the crazy Ontario heat today, my hydro decided to take a break. Coincidence? Or were the air conditioners taking a little too much space on the grid? But we’re back in business. Let’s get cooking!
Taco Salad supreme
A delicious alternative to traditional taco's when you want to change it up. Great for a summer day or a bbq potluck!
Ingredients
- 1 lb ground beef
- 1-2 heads lettuce chopped
- 1 bunch green onion chopped
- 1/2 cup bell pepper finely chopped
- 1 1/2 cup fresh tomato chopped
- 3/4 cup shredded cheddar cheese
- 1 bag cool ranch Doritos, approx 200g bag
- 1 bottle ranch dressing
- 3 tbsp taco seasoning
Instructions
- Brown beef with 1 tbsp of the taco seasoning. May add additional onion and garlic powder. Set aside to cool
- Mix ranch dressing with remaining taco seasoning
- Toss together all chopped vegetables in a large salad bowl
- Crumble bag of Doritos onto the salad
- Add the cooled beef
- When ready to eat toss with the seasoned ranch dressing
- Enjoy!
