This weekend I quickly needed a kid friendly meal idea for impromptu dinner guests. Sounded like the perfect opportunity for me to play with one of my favourite kitchen toys while providing creative entertainment for my very busy nephews. What an ideal time to get out the kitchenaid spiralizer attachment and curl up some homemade curly fries. Of course I don’t think my sister would have appreciated me serving them only deep-fried carbs for dinner so we added some delicious make your own Souvlaki for the kids to enjoy. Result= happy kids+ Happy Aunt. Hopefully it slightly made up for the fact that my pool heater quit last weekend, and so regardless of the very pleasant weather, the pool was nothing but a beckoning temptation of blue, but icy cold water this weekend. Not enjoyable for kids with little meat on their bones to swim in. The pool temperature sadly went from a balmy 86 degrees to a very chilly 68 degrees…. boo hoo hoo. Welcome to Canadian weather. Next weekend hopefully this will be rectified. Surprisingly I am having a difficult time finding a gas fitter that considers this as much of a crisis as myself!
So here we are with the Souvlaki recipe. The curly fries speak for themselves. You basically need a spiralizer and a deep fryer. Spiralize some good russet potatoes and fry to a crisp golden brown, salt, and …ta..da you are finished. Serve them as a fun side as a treat.
The dressing for the Greek salad can be made yourself VERY easily with only a couple ingredients. Find how easy that is here.
Greek Souvlaki with Homemade Curly Fries
Ingredients
- 1 package of pita bread
- 2 lbs cubes pork
- 1 lemon
- 1 tbsp greek oregano
- 1/4 tsp dill weed
- 1/4 tsp pepper
- 1/2 tsp salt
- 1/4 cup olive oil
- 1 head of romaine lettuce
- 1 cucumber
- 1 cups chopped tomatoes
- 1/2 cup chopped red onion
- 1/3 cup feta cheese
- 1/2 cup tzatziki sauce
- 1/2 cup greek dressing
Instructions
- Marinate for a couple hours or overnight in the refrigerator. Place cubed pork in a freezer bag with the juice of 1 lemon, oregano, dill weed, salt, pepper, and olive oil
- Skewer pork on metal skewers suitable for the BBQ or soak bamboo skewers several hours in water
- Make greek salad with romaine, tomatoes, cucumber. onion, feta cheese
- BBQ the skewered pork until no longer pink
- Dress the salad
- Remove meat from the skewers and add to warm pita's with tzatziki sauce and greek salad
- Enjoy!
