Ultimate Comfort Shepherd's Pie
Good old fashioned comfort food from our grandmothers kitchen. This is an Ultimate comfort food. Simple meat, potatoes and vegetables all in one dish!
Ingredients
- 2 lbs ground beef
- 1 small onion finely chopped
- 1 tbsp olive oil
- 1 can mushroom soup
- summer sweet peas
- 1 cup frozen corn
- 10 potatoes
- 1/3 cup of milk
- 3 tbsp sour cream
- 4 tbsp softened butter
- 3/4 cup of grated cheddar or sharp cheese
- 1 tsp + 1/2 tsp salt divided
- 1/4 tsp pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1 tsp chicken base
Instructions
- soften onion in olive oil ( TIP: I use an enameled cast iron 9x12 baking pan for this so I only have to use 1 pan)
- Brown beef seasoned with 1/2 tsp salt, pepper, onion powder, garlic powder, and chicken base in the same pan as the onions. Set aside browned beef and onions.
- Make mashed potatoes. Boil peeled and washed potatoes in a heaping tsp of salted water. It is important to salt your water. I do not add salt after the cooking process to my food. Cooking with salt evenly distributes to your food as opposed to salting after cooking which leaves your food tasting too "salty".
- When potatoes are soft, drain and add milk, butter, and sour cream.
- Mash. Alternatively if you have a kitchenmaid mixer, you can whip your potatoes around in there on med-high speed until smooth
- Assemble the Shepherd's pie If you browned your beef and onion in a frying pan you will need to transfer to a 9x11 pan. Add 1/2 can of the mushroom soup and your veggies to the meat mix.
- Pile on the mashed potatoes and carefully smooth out without mixing with the meat layer
- cover the mashed potatoes with the remaining mushroom soup without mixing in
- sprinkle with shredded cheese
- bake to heat through in 350 degree oven covered approx 30-45 min, uncover and broil the cheese in last few minutes
- Let rest for 10 minutes and Enjoy!

For me, there are a few foods from my childhood that truly feel like a “comfort food”. A true blue friend when you are looking for a simple comfort. These kind of recipes are the ones that we create for our children who in turn will create for their children. Maybe they’ve been modified a little along the way but would have basically be found cooking in our grandparents and great grandparents kitchens. They are the ones that give a sense of home and well being to our families when they come home from school and work with empty bellies and hungry appetites. This is one from our kitchen that has given our family a sense of comfort for many generations. It’s certainly one of my daughter’s favourites!
This also works well as a meal to make ahead and heat up when you are ready to eat. Make it on the weekend and have on a workday rushed night so you can get the kids out the door to their activities. Perfect for making 2 pans and putting one in the freezer for a home cooked meal without the work. Even myself who loves to cook and misses my kitchen on vacation, just doesn’t feel up to cooking. Pulling a pan of a homemade meal out of the freezer can feel like a well deserved reward.
This is my tool for this dish and love it! Less clean up to fry your meat and onions right in this dish and then assemble and bake the casserole. Bonus is that it keeps the Shepherd’s pie warm for hours!
