Crutches and Couches
First off, my sincere apologies for my neglect in posting in the last while. I recently had an accident with my stairs that left me with my left leg broken and my right ankle severely sprained with extensive ligament damage. I have been totally immobile! The hardest thing I have ever experienced. I know things can always be worse and bones will heal so I will try not to complain about it too much. In fact I would like to just pretend that everything is okay now. I am mentally exhausted from the limitations.
Lately I have been laying on the couch knitting, reading, and binge watching the show “Mom” and I am quite frankly sick of it! Thinking about all the things I want to get doing in the kitchen and my desk piling up with things to get done, I am getting anxious. Everyday I try to do something to show my progress to myself, for my own sake and sanity. I set goals to accomplish, small as they may be, but at least it’s something.
Baby steps to a determined rapid recovery
Today it was getting these pictures edited and uploaded for these apple cookies I made before my fall. Now I know it seems a little late as Christmas baking will soon be more of a priority than making apple cookies from fresh apples picked in October; but I am a little behind. In the upcoming posts I will be sharing with you the journey of all those Christmas goodies I have been laying there daydreaming about. I have been itching to get started. In fact, this morning I had my husband bring up my Christmas kitchen box!
Ahh Christmas food….yes I am going to admit that yesterday I started watching Christmas specials. Yikes, sorry! I am one of those people! (No, I don’t have a Christmas tree up!) I do however have spreadsheets for my Christmas food, baking and gifts. In fact, I am going to share them with you on my upcoming posts over the next several weeks.
Mind over matter
So I have been told I am relieved of my Christmas duties this year. Can you hear my heart breaking?!! I know my family meant well, and some people would celebrate that, but honestly I feel like my feet have been ripped out from under me. I absolutely LOVE to feed the people I care about. Seriously, it is what brings me happiness in life, and was one of the main things driving me to getting better. It is 100% how I show my Christmas love; Through putting all my heart into the food and putting thought into every detail to make Holidays special for my family. It is not at all work to me but my pure enjoyment, and creative outlet that I am lucky to be able to share. There is nothing more satisfying than filling hungry bellies at Christmas and always.
Now I seriously appreciate that my sister will do a lovely dinner, and totally support if she truly wants to host a Christmas, but I can’t just turn my heart off from Christmas and what it means to me. In truth, it has made me more determined than ever to get my legs working and back in the kitchen, and passionately more intent on getting back to myself. I may not do Christmas dinner, but I will certainly still be sharing my Christmas love through food this year. In fact, I will be cooking and baking more than I ever have! All my family and friends should start shopping a couple sizes up for the holidays because this foodie is not going to stop sharing what I do. As a promise to myself I plan on proving this girl will not be kept down!
Back to the Apple Cookies
Sorry for the exceptionally long post today. I am long overdue with my lack of computer use lately and I am filled with words to jabber on about. However, I know you are reading this for the Apple cookies and so I shall meander back to that. These are soft and delicious and made from fresh apples. They also stay soft unlike some cookie recipes that come out of the oven soft and then harden after a short time. So there are no excuses to eat them all within the first hour of them coming out of the oven. They can be savoured over several days or frozen for future enjoyment!

Stay Soft Fresh Apple Cookies
Delicious and easy apple cookies made from fresh apples and stays soft.
Ingredients
- 1/2 Cup Softened Butter
- 1/2 Cup Shortening
- 1 Cup Brown Sugar
- 1/2 Cup White Sugar
- 1 Egg
- 1 1/2 Cups Flour
- 2/3 Cup Applesauce
- 2 Cups Oatmeal
- 3 tsp Baking Powder
- 3/4 tsp Salt
- 2 1/2 tsp Cinnamon
- 1 Cup Fresh chopped apples
Instructions
- Combine the butter, shortening and sugars in a stand mixer or electric hand mixer
- Add egg and applesauce and beat to combine
- Combine dry ingredients and add to wet ingredients mixing lightly until just incorporated
- Fold in the fresh apples
- Drop by spoonfuls onto cookie sheet lined with parchment paper
- Bake at 350 Degrees for 20-25 minutes
- Enjoy!
Notes
Use whatever apples you have on hand for the fresh apples. I use a mixture of whatever I have in the kitchen
