Moist and Rich Chocolate birthday cake emoji style
I will be the first to admit that I am not a great cake decorator. I am totally enamoured with the majestic beauty of some of the cakes out there. Cake decorating is certainly an amazing art form, and I do admire the creativity and patience some people have put into the craft. One only has to watch an episode of “Cake Boss” to truly appreciate the work of art that goes into cake decorating. It’s just not me. I’m too sloppy and don’t have enough patience to really make my cakes look good. My mom has done some amazing cakes that look super cool. I guess I just haven’t inherited that gene.
That being said, that doesn’t mean I don’t love to try putting forth a little effort. There are some really cute ideas out there for cakes and cupcakes that are more my style of EASY. For me a cake is all about the flavour. The rest is just “Icing on the cake” as they say. I mean, it’s hard for me to think of spending hours on something that gets devoured in seconds. So, when I can find something that has a huge cute factor but still tastes great, I’m all ears and eyes.
Moist and Rich Chocolate Cake
I have made several chocolate cakes over the years. They are usually pretty no fail, unlike vanilla cakes that can be a little dense at times without perfect temperature eggs and milk and of course the kitchen itself. Not to mention you have to look at them the right way, give a little wink and say a prayer before you pop it in the oven. Okay slightly exaggerated but, a chocolate cake made with buttermilk or sour cream comes out super moist and fluffy, always, never fail. They are far more forgiving for a novice baker. Bring out the rich chocolate flavour in the cake and you have a perfect blend of rich and moist. My go to ingredient for this is always coffee. Nothing brings out that deep chocolate flavour more than some rich coffee brew.

Like I mentioned, I am always looking for cute ideas without lots of decorating work. A quick stop on Pinterest will provide hundreds of these ideas. Okay so maybe by the time you get off Pinterest you could have made a work of art worthy of Cake Boss if you are anything like me; But, if you set a time limit for yourself you can quickly find an idea and put it into action. Mine this year for my daughter’s Birthday was an emoji style cake that I got from looking at several pictures and coming up with my own final result. Before you laugh, remember, it did taste great and that’s what counts!

- 3 cups Flour
- 4 Eggs
- 1 1/3 cups Buttermilk
- 1 3/4 cups Warm brewed coffee
- 1 1/2 tsp Vanilla
- 1/3 cup melted butter
- 1/3 cup Vegetable Oil
- 2 cups Granulated Sugar
- 1 cup Brown Sugar
- 1 1/3 cups Unsweetened Cocoa Powder
- 1 oz Unsweetened Chocolate melted
- 1 tbsp Baking Soda
- 1 1/2 tsp salt
- 1 1/2 tsp Baking Powder
- Preheat oven to 350 degrees
- Butter and Flour 3, 9" cake pans. Alternatively, you can do 2 and have 12 cupcakes to surround your cake with, or freeze to pull out for a quick dessert at a later time.
- Melt chocolate in the microwave and let sit to cool
- Mix together on low speed of a hand or stand mixer the flour, sugar, cocoa, baking soda, baking powder, and salt. Just to combine.
- Add the melted chocolate, melted butter, eggs, buttermilk, brewed coffee, oil and vanilla and beat on medium speed until moistened and there are no lumps of flour.
- Pour into prepared pans or cupcake pan
- Bake for approximately 30 minutes. Until cake starts to come away from the edge of the pan and toothpick comes out dry from centre of the cake
- Let cool slightly (about 10 minutes) and gently turn out cake from pans using a spatula to make sure there is no part of the cake sticking to the side of the pans.
- Ice the cake with your chosen frosting and Enjoy!
