Well, with November just a couple short days away, it is going to be that time we start to think about our Christmas baking. Yikes! Where has the time gone? Was it not just a couple weeks ago we were floating and frolicking in the pool? Enjoying our gorgeous Ontario great lakes beaches? With Halloween rearing it’s head in two days, we know that right behind it will be Christmas lights popping up from house to house. Christmas toons will shortly start playing in stores softly urging us to start our Christmas shopping. Every year I say I am going to get ahead of myself and start early and freeze; and then it never happens.
Times are Very Different
It is a strange year however, and we need to consider what, if any, part of Christmas will be normal. We are in Covid-19 times and things continue to change daily. It will be a time that we have to find a way to make the best we can of our situation. If things don’t miraculously improve in the next short bit we may not be able to travel and see the loved ones we want to see, or have large family gatherings we have maybe taken for granted. Those Holiday parties that we have enjoyed just might not be possible. And friends and relatives that we don’t get to see often but, looked forward to holiday visits with, just may be too risky.
This might be a Christmas where lessons are learned about the real things we appreciate about the Holiday season. A time when we come to realize we’ve lost what was taken for granted.
I will carry on with a few favourites in our family, starting with these delicious and easy no bake cookies. My sister loves these so I make two batches of these so I can give her family lots. These are easy to make and packed with chocolatey flavour with only a few ingredients! They are a great treat to make with the children for any occasion.My family have been making these for generations as a Christmas treat, but they are definitely delicious any time.
No Bake Chocolate Cookies
A delicious and easy no bake cookie that keeps well and freezes well.
Ingredients
- 1/2 cup Butter
- 1/2 cup milk
- 2 cups of sugar
- 1/2 cup od cocoa powder
- 2 1/2 cups rolled oats
- 1 cup shredded coconut
Instructions
1. Melt butter in a heavy bottom saucepan
2. Add milk, sugar, and cocoa powder and boil gently for 5 minutes
3. Add the rolled oats and coconut and remove from heat.
4. Stir to combine
5. Drop by spoonfuls onto waxed or parchment paper.
6. Allow to dry until hard enough to remove from paper.
7. Enjoy!
