Turkey loaf & Sweet potato mash
Why not change up regular meatloaf night with a savoury turkey meatloaf instead? Packed with the flavours of a turkey dinner and full of nutritious quality, it’s an ideal choice for a weeknight meal.
Costco sells approximately a 4 pound package of ground turkey, individually packaged in 1 pound containers. You will need 2 packages for this loaf and then put the other 2 in the freezer for another meal. Or…..make 2 loaves and put one in the freezer to pull out a delicious healthy ready to heat meal. The leftovers of this loaf make great weekday sandwiches so consider making it on a weekend.
This is a healthier alternative to a beef meatloaf and a good consideration when you are a little bored of the plain old chicken meals. I served this with a mix of white potato and sweet potato mash and a side of greek salad with lots of yummy feta cheese!
- 2 lb of ground turkey
- 1 cup of stuffing mix
- 1 egg
- 1 stalk of celery
- 1/2 onion or 1 small one
- 1/4 tsp of savoury
- 1/4 tsp of sage
- 
- 1/2 tsp of garlic powder
- 1 tsp of chicken base
- 1/2 tsp salt
- 1/4 tsp of pepper
- 2 tbsp of melter butter
- 1 pkg of turkey gravy mix optional
- Mix all together by hand and bake at 375 degrees in a loaf pan.
- When the loaf starts to pull away from the edge of the pan, dump out onto casserole dish and continue baking until it is browned all the way around.
- Serve alone or make a package of turkey gravy and pour over loaf.
