Simple Dill Pickles
Garlicky dill pickles with only a few ingredients and simple to make. Simply the best tasting!

Ingredients

1/2 bushel basket
pickling cucumbers
1
bunch
dill
approximately 3 plant stems
8
cups
vinegar
8
litres
water
2
cups
salt
4
heads
fresh garlic
Instructions
For the Brine
Add the water, vinegar, and salt to a large pot and heat to dissolve all the salt. Keep the brine on a low simmer while filling the jars.
For the pickle jars
Wash all the cucumbers in water only thoroughly
Peel and roughly chop garlic
Pick off dill weed and flower heads from stems
Start filling jars with a couple tsp’s of chopped garlic and add bunches of dill pieces
Arrange the cucumbers tightly into the jars
Start to fill the jars with the hot brine. (best to use a funnel to prevent spillage and burns). Leave 1/4 inch from the rim.
Seal the jars tightly making sure none of the seals are rusty.
Boil jars for 5 min in a pot of clean water and remove with a jar lifter.
Let cool and store in a cool dry place, making sure lids have sealed before putting away.
