The Best Date Sandwich Cookies Ever
Oatmeal and Dates are the perfect combination for breakfast!
Wouldn’t you love to be able to eat delicious cookies for breakfast? In a perfect world, we could have guilt free mornings of enjoying cakes or cookies with that first morning coffee in a perfect harmony. However…. most of us don’t. With these oatmeal and date cookies you can do just that! I mean, oatmeal is a breakfast food right? And dates are even better! Put them together and you have a yummy breakfast.
I shamefully admit that I am not much of a breakfast eater at all. (Unless you count coffee.) Of course, I do put dairy in my coffee, that counts for something! But, when there is a batch of these delicious cookies made, I am known to have one, or maybe even two of these with my morning coffee. Wow, that’s hitting three food groups!
Aside from breakfast, these delicious goodies are a treat for any time of day. They are also a cinch to make, and freeze up quite nicely. Great to stock them up and enjoy them good as fresh without the work. 😉
A small word of warning
With sharing this recipe with you I will pass along a word of warning. If you make these, there is a 100% chance you will be requested to make them again, and again, and again. So share them wisely and only if you enjoyed making them. Luckily for my mom I do enjoy making them. She is definitely the biggest fan of these!

- 3 cups Pitted Dates
- 1+ 1/2 cups water
- 1/2 cup sugar
- 1 Tbsp Fresh Lemon juice
- Place the Dates, Water and Sugar into a heavy bottomed saucepan and cook slowly until dates resemble a spreadable creamy mixture.
- Add lemon juice and stir into mixture. Remove from heat and allow to cool.
- Roll out cookie dough on lightly floured surface. With a round cookie cutter of your desired size, cut out cookies about 1/8" thick.
- Bake on a parchment lined cookie sheet in a 350 degree oven for approx 15-20 minutes. (until edges are a golden brown)
- Cool on wire racks for 5-10 minutes and then spread date filling into cookies.
- Enjoy!
