I confess, I used to buy pancake mix from a box. It’s quick, it’s easy and it tastes not half bad. But honestly, once I started making this buttermilk pancake recipe I never went back. Pancake mix is no longer a staple in my pantry or on my shopping list. The texture of these pancakes makes them nearly melt in your mouth. They are soft and buttery and make a wonderful weekend morning treat with a side of ham or sausage. Pair it with some fresh maple syrup or homemade strawberry jam and you’re in for a treat. I personally like my pancakes plain with syrup but you could easily add blueberries or even chocolate chips if that’s what you fancy. I have even switched these up and put this batter in my waffle maker instead of making them into pancakes. Serve that with some strawberry sauce and a dollop of whip cream and you have a beautiful brunch dessert that will impress!

Softest Buttermilk Pancakes
Softest buttermilk pancakes. These pancakes have a soft and buttery texture that will melt in your mouth!
Ingredients
- 2 cups flour
- 1 tbsp sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs
- 2 cups of buttermilk
- 1/4 cup melted butter
- 1/4 tsp vanilla
Instructions
- You will need 3 measuring cups, large, med and small
- In the large measuring cup or batter bowl sift together the dry ingredients
- In the medium cup lightly beat eggs with a fork and add the buttermilk. (Tip..2 eggs usually add up to 1/2 cup so there is no need to dirty another measuring cup just add buttermilk up to the 2 1/2 cup mark)
- In the small measure melt the butter in the microwave
- Mix the wet ingredients into the dry ingredients adding the melted butter last. DO NOT OVER MIX. Batter should be all wet but not completely smooth
- Use a little melted butter, or oil to lightly oil the griddle or fry pan. Cook pancakes on the medium heat until the edges start to bubble. Carefully flip and cook other side.

Yes unfortunately. It keeps for a long time in the fridge though. That’s what makes them so soft.
