If you’re fortunate enough to have been to your local ribfest or live close enough to where one was hosted, you know how smoking ribs is close to one of the best smells on earth. Nothing says summer bbq like the smell of good old baby back ribs smoking on the bbq.
Now these are truly best on a “green egg” or “komado joe” type bbq but smoking chips in a regular bbq or a charcoal grill will do the trick. The benefit of the komado type grill is that it will slowly cook your food without drying out the meat and can then sear it to make that gooey glaze we all strive to achieve. Ribs done on this type of grill take very little effort for very satisfying results!
For this past Mother’s day our family did a bbq with these ribs and a bunch of side salads. Potato, macaroni, greek pasta and caesar salad. Lots of food, mostly prepared ahead and lots of time to just enjoy the day and the company. If you’re looking for an ideal meal to prepare this summer that’s a sure crowd pleaser, but don’t want to spend your day in the kitchen, this is it!
Smoked BBQ ribs
An easy crowd pleasing meal that takes little effort but has outstanding flavour. Your backyard will smell like a rib festival on a summer afternoon.
Ingredients
- 1 bottle bbq sauce, I use sweet baby rays or your can make your own
- 4 racks back ribs, you could also use side ribs
- 1/4 tsp salt
- 1/2 tsp garlic powder
Instructions
- Take back skin off the back ribs by running an incision down the underside and peeling back the thin layer of skin. (Does not need to be done on side ribs)
- Place ribs directly on grill in a low smoking charcoal grill with the lid covered. Cook ribs long and slow with nothing on the them to start. This is where the ribs will get smoke flavoured. Leave them on for approximately 2 hours.
- Season the ribs and put your sauce of choice. (I like Sweet Baby rays) At this point you want to open up the air vents on the grill so that the bbq gets hotter. This will caramelize the sauce and crisp up the ribs.
- Cook approximately 20-3 min at the higher heat until the ribs are nicely browned and sauce has thickened and glazed.
