We all have that one dish that is requested again and again. In my house this garlicky caesar salad dressing is that recipe, and is made on a regular basis. We do not want to disappoint an impromptu dinner guest who may be saddened by a trip to my table without the famous “vampire killer” caesar salad! I have made this dressing a staple in my refrigerator for several years now.
It’s easy to make a large batch of this dressing to easily whip up a salad as a side to even a quick takeout. So many meals are enhanced by a deliciously garlicky caesar side salad. It just goes hand in hand with so many things! Italian pasta night, bbq steak, a burger, or even pizza. If you have the dressing on hand, you can easily have restaurant quality in the blink of an eye! Costco sells bacon made by Hormel which is already pre-cooked ready to eat or heat. Now I am usually not a fan of “pre” of much but this bacon is worth a try. It takes just as you made it from raw, but without the splatter mess in your kitchen! It’s also great for quick club house sandwiches.
The most important thing to remember about this dressing is that you simply CANNOT leave out the anchovies! (even if you don’t like them). These ingredients need to work hand in hand and without one, the dressing is truly at a loss. It also needs to come with a warning for all guests or family members to eat together. The non salad eater will sadly suffer in the company of the salad eaters who have enjoyed the many benefits of a tremendous amount of garlic. Also recommended not to eat before a job interview, first date, or any important meeting!
Unforgettable Ceasar Salad
Ingredients
- 2/3 cup olive oil
- 2/3 cup mayonnaise
- 1 whole head of garlic
- juice of 1 lemon
- 1/2 tsp fresh ground pepper
- 3/4 tsp salt
- 1 tsp dry mustard powder
- 1 tsp honey
- 1 tbsp worcestershire sauce
- 2 anchovy filets
- 2 tbsp fresh parsley or 1 tsp dried
- 2 tbsp grated parmesan cheese
Instructions
- peel garlic cloves and
- combine all ingredients in a food processor and combine until smooth
- let sit in for a least an hour before adding to salad
- store in airtight container in the refrigerator for up to 2 weeks
- Serve on chopped romaine tossed with cooked pieces of bacon, croutons and parmesan, romano or asiago cheese
