Here is your meal idea number 3!
This meal is super simple and so delicious! Simply marinate your chicken breast pieces in a balsamic Vinaigrette overnight in a plastic freezer bag. You will need about a cup. Make sure the chicken is covered lying flat.
When you are ready to grill, add salt and pepper seasoning. Heat grill before adding the chicken and cook at the highest location in the barbecue. Grill until the juices run clear but careful not to overcook and dry out the chicken. Breast meat dries out quickly!
I serve this with a simple white jasmine rice which I cook in my rice cooker (an essential in my kitchen!) and serve it on a bed of spinach drizzled in a fig balsamic reduction.
You simply cannot get any easier than this!
